Callaway Cellars was founded in Temecula, California in 1973 by Eli Callaway. In 1981, Callaway sold the winery to Hiram Walker & Sons, and went on to have a second career as the founder of Callaway Golf. In 1989, Hiram Walker was purchased by Allied Domecq. When that company was acquired by Pernod Ricard in 2005, the Callaway brand was offloaded to Miami-based distributor Shaw-Ross International, although the vineyard was purchased separately by businesswoman Patricia Lin, who negotiated for the right to use the name for wines sold onsite.

Shaw-Ross soon shelved the brand, and in 2019 it was purchased by Precept Wines, which revived the Callaway name.
